This fruit tart is so simple and delicious! It can be made with a mix of berries, or a single type of berry. My original recipe (from Kate Carr :)) says to just use strawberries, but I had a medley of berries I needed to use up, so I used strawberries, blueberries, and raspberries. Perfect for the Fourth of July!
All you need is: 2 c. fresh fruit
1/2 c. butter
1/4 c. sugar
1 1/4 c. flour
pinch of salt
1/2 c. apple jelly And all you need to do is: 1. Cream the butter and sugar. Add flour and salt to form soft dough. Press into bottom and sides of a 9" tart pan. Bake at 325 degrees for 20 minutes or until lightly browned. Let cool. 2. Wash fruit. Heat apple jelly in a small saucepan. 3. Place berries on the cooled crust and brush with apple jelly. Chill and serve with whipped cream or ice cream (optional).
